- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 2 Small Summer Squash
- 2 Small Zucchini Squash
- 1 Medium Onion
- 1 Cup Canned Tomatoes
- 24 Oz V8 Spicy Tomato Juice
- 2 Garlic Cloves, minced
- Salt and Pepper to taste
- Cumin to taste
- Cut up all ingredients, put into a crock pot on high. Add V8 and Tomatoes. Garnish with Garlic, Cumin, Pepper and salt.
- Cook on High for 3 hours, reduce to low for 2 hours, then keep warm.
