Quinoa Tabouleh


  • 2 cups rinsed quinoa
  • 4 cups water
  • Zest of 2-3 lemons
  • 1/3 cup lemon juice
  • 2 TBSP olive oil
  • 8 scallions sliced, white and green
  • ¾ cup chopped mint
  • 1 cup chopped fresh parsley
  • 6-8 tomatoes diced
  1. Prepare quinoa per package directions. 
  2. Cool and toss with other ingredients.

Makes 12 1.1 Cup Servings
