- 2 cups rinsed quinoa
- 4 cups water
- Zest of 2-3 lemons
- 1/3 cup lemon juice
- 2 TBSP olive oil
- 8 scallions sliced, white and green
- ¾ cup chopped mint
- 1 cup chopped fresh parsley
- 6-8 tomatoes diced
- Prepare quinoa per package directions.
- Cool and toss with other ingredients.
Makes 12 1.1 Cup Servings
